- 2 boneless, skinless chicken
- 1 cup white rice
- 2 cups chicken broth
- 1 onion, diced
- 2 cloves garlic, minced
- 1 tbsp olive oil
- 1 tsp salt
- 1/2 tsp black pepper
- 1 tsp paprika
- 1/2 tsp dried thyme
Instructions
- Heat olive oil in a large pan over medium heat.
- Add diced onion and minced garlic, sauté for 2 minutes.
- Season chicken with salt, pepper, paprika, and thyme.
- Add chicken to the pan and cook for 5 minutes per side.
- Remove chicken, add rice and chicken broth to the pan.
- Bring to a boil, then reduce heat to low.
- Return chicken to the pan, cover, and simmer for 20 minutes.
- Remove from heat and let sit for 5 minutes before serving.
Notes
- You can use brown rice instead of white but increase cooking time.
- Add vegetables like peas or carrots for extra nutrition.
- Leftovers keep well in the fridge for 3 days.
