Description

Crispy arancini risotto balls made in an air fryer for a healthier twist on the classic Italian dish.


Ingredients

  • 2 cups cooked risotto (cooled)
  • 1/2 cup grated Parmesan cheese
  • 1/2 cup mozzarella cheese (cut into small cubes)
  • 1 egg (beaten)
  • 1/2 cup breadcrumbs
  • 1 tbsp olive oil
  • 1 tsp Italian seasoning
  • 1/4 tsp salt
  • 1/4 tsp black pepper

Instructions

  1. Preheat air fryer to 375°F (190°C).
  2. Mix cooled risotto, Parmesan cheese, egg, Italian seasoning, salt, and pepper in a bowl.
  3. Scoop about 1 tbsp of the mixture and flatten it in your palm.
  4. Place a cube of mozzarella in the center and shape into a ball.
  5. Roll each ball in breadcrumbs until fully coated.
  6. Lightly spray or brush with olive oil.
  7. Place arancini in the air fryer basket, leaving space between each.
  8. Cook for 10-12 minutes until golden and crispy.
  9. Serve warm with marinara sauce for dipping.

  • If the mixture is too sticky, refrigerate for 15 minutes before shaping.
