Easy and healthy banana nut muffins made in the air fryer. Perfect for a quick breakfast or snack.
Ingredients

- 2 ripe bananas, mashed
- 1 egg
- 1/4 cup honey
- 1/4 cup melted coconut oil
- 1 tsp vanilla extract
- 1 cup whole wheat flour
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1/2 tsp cinnamon
- 1/4 tsp salt
- 1/2 cup chopped walnuts
Instructions
- Preheat the air fryer to 350°F (175°C).
- In a bowl, mix mashed bananas, egg, honey, coconut oil, and vanilla.
- In another bowl, whisk flour, baking powder, baking soda, cinnamon, and salt.
- Combine wet and dry ingredients. Fold in walnuts.
- Pour batter into greased muffin cups, filling 3/4 full.
- Air fry for 12-15 minutes or until a toothpick comes out clean.
- Let cool before serving.
Notes
- Use very ripe bananas for natural sweetness.
- Replace walnuts with pecans if preferred.
- Store in an airtight container for up to 3 days.
