Description
A simplified version of the classic Beef Wellington, made easy with an air fryer. Perfectly cooked beef tenderloin wrapped in puff pastry with a flavorful mushroom duxelles.

- 1 (8 oz) beef tenderloin filet
- 1 sheet puff pastry, thawed
- 1/2 cup mushrooms, finely chopped
- 1 tbsp Dijon mustard
- 1 tbsp olive oil
- 1 egg, beaten (for egg wash)
- Salt and pepper to taste
Instructions
- Preheat air fryer to 400°F (200°C).
- Season beef with salt and pepper. Sear in a hot pan with olive oil for 1-2 minutes per side. Brush with Dijon mustard.
- Sauté mushrooms until dry, then let cool.
- Roll out puff pastry and spread mushrooms over it. Place beef in the center and wrap tightly.
- Brush pastry with egg wash and place in the air fryer.
- Cook for 12-15 minutes until pastry is golden and beef reaches desired doneness.
- Let rest for 5 minutes before slicing.
Notes
- Use precooked prosciutto for extra flavor.
- Thaw puff pastry before use.
- Check beef temperature with a meat thermometer (130°F for medium-rare).
