Description

A simplified version of the classic Beef Wellington, made easy with an air fryer. Perfectly cooked beef tenderloin wrapped in puff pastry with a flavorful mushroom duxelles.


Ingredients

  • 1 (8 oz) beef tenderloin filet
  • 1 sheet puff pastry, thawed
  • 1/2 cup mushrooms, finely chopped
  • 1 tbsp Dijon mustard
  • 1 tbsp olive oil
  • 1 egg, beaten (for egg wash)
  • Salt and pepper to taste

Instructions

  1. Preheat air fryer to 400°F (200°C).
  2. Season beef with salt and pepper. Sear in a hot pan with olive oil for 1-2 minutes per side. Brush with Dijon mustard.
  3. Sauté mushrooms until dry, then let cool.
  4. Roll out puff pastry and spread mushrooms over it. Place beef in the center and wrap tightly.
  5. Brush pastry with egg wash and place in the air fryer.
  6. Cook for 12-15 minutes until pastry is golden and beef reaches desired doneness.
  7. Let rest for 5 minutes before slicing.

Notes

  • Use precooked prosciutto for extra flavor.
  • Thaw puff pastry before use.
  • Check beef temperature with a meat thermometer (130°F for medium-rare).
