Ingredients

- 1 cup cooked and pureed beets
- 1/2 cup almond flour
- 1/4 cup cocoa powder
- 1/4 cup honey or maple syrup
- 2 eggs
- 1 tsp vanilla extract
- 1/2 tsp baking powder
- 1/4 tsp salt
- 1/4 cup dark chocolate chips
Instructions
- Preheat the air fryer to 320°F (160°C).
- In a bowl, mix the beet puree, eggs, honey, and vanilla.
- Add almond flour, cocoa powder, baking powder, and salt. Stir until combined.
- Fold in the chocolate chips.
- Pour the batter into a greased baking pan that fits in the air fryer.
- Air fry for 20-25 minutes or until a toothpick comes out clean.
- Let cool before slicing.
Notes
- Use fresh beets for the best flavor.
- Check the brownies a few minutes early to avoid overcooking.
- Store leftovers in an airtight container for up to 3 days.
