Description

Crispy, golden hand pies filled with sweet blueberries, made easy with an air fryer.


Ingredients

  • 2 cups fresh or frozen blueberries
  • 1/4 cup granulated sugar
  • 1 tbsp cornstarch
  • 1 tsp lemon juice
  • 1 package refrigerated pie crust (or homemade)
  • 1 egg (for egg wash)
  • 1 tbsp water (for egg wash)
  • 1 tbsp coarse sugar (optional, for topping)

Instructions

  1. Preheat your air fryer to 350°F (175°C).
  2. In a bowl, mix blueberries, sugar, cornstarch, and lemon juice.
  3. Roll out the pie crust and cut into 4-inch circles.
  4. Spoon 1-2 tbsp of blueberry filling onto half of each circle.
  5. Fold the dough over the filling and crimp edges with a fork.
  6. Whisk egg and water, then brush over pies.
  7. Sprinkle with coarse sugar if desired.
  8. Air fry for 10-12 minutes until golden brown.
  9. Let cool slightly before serving.

Notes

  • Use frozen blueberries if fresh aren’t available.
  • Seal edges well to prevent filling from leaking.
