Description
Crispy, golden hand pies filled with sweet blueberries, made easy with an air fryer.
Ingredients

- 2 cups fresh or frozen blueberries
- 1/4 cup granulated sugar
- 1 tbsp cornstarch
- 1 tsp lemon juice
- 1 package refrigerated pie crust (or homemade)
- 1 egg (for egg wash)
- 1 tbsp water (for egg wash)
- 1 tbsp coarse sugar (optional, for topping)
Instructions
- Preheat your air fryer to 350°F (175°C).
- In a bowl, mix blueberries, sugar, cornstarch, and lemon juice.
- Roll out the pie crust and cut into 4-inch circles.
- Spoon 1-2 tbsp of blueberry filling onto half of each circle.
- Fold the dough over the filling and crimp edges with a fork.
- Whisk egg and water, then brush over pies.
- Sprinkle with coarse sugar if desired.
- Air fry for 10-12 minutes until golden brown.
- Let cool slightly before serving.
Notes
- Use frozen blueberries if fresh aren’t available.
- Seal edges well to prevent filling from leaking.
- Adjust sugar based on berry sweetness.
