Description

Easy and healthy blueberry protein muffins made in an air fryer. Perfect for a quick breakfast or snack.


Ingredients

  • 1 cup oat flour
  • 1 scoop vanilla protein powder
  • 1/2 cup Greek yogurt
  • 1/4 cup almond milk
  • 1 egg
  • 1 tbsp honey
  • 1 tsp baking powder
  • 1/2 cup fresh blueberries

Instructions

  1. Preheat air fryer to 350°F (175°C).
  2. Mix oat flour, protein powder, and baking powder in a bowl.
  3. Add Greek yogurt, almond milk, egg, and honey. Stir until combined.
  4. Gently fold in blueberries.
  5. Divide batter into silicone muffin cups.
  6. Place in air fryer basket and cook for 12-15 minutes.
  7. Let cool before serving.
