Easy and healthy blueberry protein muffins made in an air fryer. Perfect for a quick breakfast or snack.
Ingredients

- 1 cup oat flour
- 1 scoop vanilla protein powder
- 1/2 cup Greek yogurt
- 1/4 cup almond milk
- 1 egg
- 1 tbsp honey
- 1 tsp baking powder
- 1/2 cup fresh blueberries
Instructions
- Preheat air fryer to 350°F (175°C).
- Mix oat flour, protein powder, and baking powder in a bowl.
- Add Greek yogurt, almond milk, egg, and honey. Stir until combined.
- Gently fold in blueberries.
- Divide batter into silicone muffin cups.
- Place in air fryer basket and cook for 12-15 minutes.
- Let cool before serving.
Notes
- Use fresh or frozen blueberries.
- Adjust sweetness by adding more honey if needed.
- Store in an airtight container for up to 3 days.
