Ingredients

- 8 egg roll wrappers
- 4 large eggs, scrambled
- 1/2 cup shredded cheddar cheese
- 1/4 cup cooked and crumbled breakfast sausage
- 1/4 cup diced bell peppers
- 1 tbsp chopped green onions
- 1 tsp oil (for brushing)
- Salt and pepper to taste
Instructions
- Preheat air fryer to 370°F for 3 minutes.
- Mix scrambled eggs, cheese, sausage, bell peppers, and green onions in a bowl.
- Place 2 tbsp of filling in the center of each egg roll wrapper.
- Fold sides inward and roll tightly, sealing the edge with water.
- Brush egg rolls lightly with oil.
- Air fry for 8-10 minutes, flipping halfway, until golden brown.
- Serve immediately with dipping sauce if desired.
Notes
- Store leftovers in an airtight container for up to 2 days.
- Reheat in the air fryer at 350°F for 2-3 minutes.
- Customize with bacon, ham, or vegetables.
