Description

A quick and crispy breakfast quesadilla made in the air fryer, perfect for a busy morning.


Ingredients

  • 2 large flour tortillas
  • 1/2 cup shredded cheese (cheddar or Mexican blend)
  • 2 eggs, scrambled
  • 1/4 cup diced bell peppers
  • 2 tbsp cooked black beans (optional)
  • 1 tbsp butter or oil
  • Salt and pepper to taste

Instructions

  1. Preheat air fryer to 370°F (190°C) for 3 minutes.
  2. Place one tortilla on a flat surface and sprinkle half the cheese evenly.
  3. Spread scrambled eggs, bell peppers, and black beans over the cheese.
  4. Top with the remaining cheese and cover with the second tortilla.
  5. Brush the top tortilla lightly with butter or oil.
  6. Place the quesadilla in the air fryer basket and cook for 4-5 minutes until golden and crispy.
  7. Flip the quesadilla, brush the other side with butter or oil, and cook for another 3-4 minutes.
  8. Remove, slice into wedges, and serve immediately.
