A quick and crispy breakfast quesadilla made in the air fryer, perfect for a busy morning.
Ingredients

- 2 large flour tortillas
- 1/2 cup shredded cheese (cheddar or Mexican blend)
- 2 eggs, scrambled
- 1/4 cup diced bell peppers
- 2 tbsp cooked black beans (optional)
- 1 tbsp butter or oil
- Salt and pepper to taste
Instructions
- Preheat air fryer to 370°F (190°C) for 3 minutes.
- Place one tortilla on a flat surface and sprinkle half the cheese evenly.
- Spread scrambled eggs, bell peppers, and black beans over the cheese.
- Top with the remaining cheese and cover with the second tortilla.
- Brush the top tortilla lightly with butter or oil.
- Place the quesadilla in the air fryer basket and cook for 4-5 minutes until golden and crispy.
- Flip the quesadilla, brush the other side with butter or oil, and cook for another 3-4 minutes.
- Remove, slice into wedges, and serve immediately.
Notes
- Use fresh tortillas for the best crispiness.
- Customize fillings with cooked bacon, sausage, or avocado.
- Serve with salsa or sour cream if desired.
