Description

Crispy buffalo chickpeas wrapped in a soft tortilla with fresh veggies and a creamy sauce.


Ingredients

  • 1 can (15 oz) chickpeas, drained and rinsed
  • 2 tbsp olive oil
  • 2 tbsp buffalo sauce
  • 1/2 tsp garlic powder
  • 1/2 tsp paprika
  • 4 large tortillas
  • 1 cup shredded lettuce
  • 1/2 cup diced tomatoes
  • 1/4 cup sliced red onions
  • 1/4 cup ranch or blue cheese dressing

Instructions

  1. Preheat air fryer to 375°F.
  2. Toss chickpeas with olive oil, buffalo sauce, garlic powder, and paprika.
  3. Air fry chickpeas for 10 minutes, shaking halfway.
  4. Warm tortillas in a dry skillet or microwave.
  5. Spread dressing on tortillas, then add lettuce, tomatoes, red onions, and chickpeas.
  6. Fold and serve immediately.

Notes

  • Use whole wheat tortillas for extra fiber.
  • Adjust buffalo sauce for more or less heat.
  • Store leftovers in the fridge for up to 2 days.
