- 1 medium butternut squash, peeled and cubed
- 2 tablespoons olive oil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon smoked paprika
- 1 small onion, chopped
- 2 cloves garlic, minced
- 4 cups vegetable broth
- 1/2 cup coconut milk
Instructions
- Preheat your air fryer to 400°F.
- Toss the butternut squash cubes with olive oil, salt, pepper, and smoked paprika.
- Place the seasoned squash in the air fryer basket and cook for 15-20 minutes, shaking the basket halfway through.
- In a large pot, sauté the onion and garlic until softened.
- Add the air-fried squash and vegetable broth to the pot. Simmer for 10 minutes.
- Use an immersion blender to puree the soup until smooth.
- Stir in the coconut milk and adjust seasoning if needed.
- Serve warm and enjoy.
