Ingredients

- 2 cups cooked risotto
- 1/2 cup grated Pecorino Romano
- 1/4 cup grated Parmigiano Reggiano
- 1 tsp freshly ground black pepper
- 1 egg
- 1/2 cup breadcrumbs
- Cooking spray
Instructions
- Mix risotto, cheeses, pepper, and egg in a bowl
- Shape mixture into 8 equal balls
- Roll each ball in breadcrumbs
- Spray with cooking oil
- Air fry at 390°F for 10 minutes
- Flip balls halfway
- Fry 5 more minutes until golden

- Serve immediately while hot
