Ingredients

  • 2 cups cooked risotto
  • 1/2 cup grated Pecorino Romano
  • 1/4 cup grated Parmigiano Reggiano
  • 1 tsp freshly ground black pepper
  • 1 egg
  • 1/2 cup breadcrumbs
  • Cooking spray

Instructions

  1. Mix risotto, cheeses, pepper, and egg in a bowl
  2. Shape mixture into 8 equal balls
  3. Roll each ball in breadcrumbs
  4. Spray with cooking oil
  5. Air fry at 390°F for 10 minutes
  6. Flip balls halfway
  7. Fry 5 more minutes until golden
