Description

Delicious and healthy carrot cake donuts made in an air fryer. These donuts are moist, flavorful, and a perfect guilt-free treat.


Ingredients

  • 1 cup grated carrots
  • 1 cup all-purpose flour
  • 1/2 cup almond flour
  • 1/4 cup brown sugar
  • 1 tsp baking powder
  • 1/2 tsp cinnamon
  • 1/4 tsp nutmeg
  • 1/4 cup milk
  • 1 egg
  • 2 tbsp melted butter
  • 1 tsp vanilla extract

Instructions

  1. Preheat the air fryer to 350°F (175°C).
  2. In a bowl, mix grated carrots, flour, almond flour, brown sugar, baking powder, cinnamon, and nutmeg.
  3. Add milk, egg, melted butter, and vanilla extract to the dry ingredients. Stir until combined.
  4. Grease the donut molds and pour the batter into them, filling each about 3/4 full.
  5. Place the molds in the air fryer basket and cook for 8-10 minutes or until a toothpick comes out clean.
  6. Let the donuts cool before removing them from the molds.

Notes

  • You can use coconut sugar instead of brown sugar for a healthier option.
  • Store leftovers in an airtight container for up to 3 days.
  • For extra flavor, add chopped nuts or raisins to the batter.
