- 1 tsp vanilla extract
- 1 cup grated carrots
- 1/4 cup milk
Instructions
- Preheat air fryer to 320°F.
- Mix flour, baking powder, baking soda, cinnamon, nutmeg, and salt in a bowl.
- In another bowl, whisk brown sugar, oil, egg, and vanilla.
- Add grated carrots and milk to the wet mixture.
- Combine wet and dry ingredients until just mixed.
- Spoon batter into muffin liners.
- Air fry for 12-15 minutes until a toothpick comes out clean.
- Cool before serving.
