Ingredients

  • 1 cup grated carrots
  • 1/4 cup milk

Instructions

  1. Preheat air fryer to 320°F.
  2. Mix flour, baking powder, baking soda, cinnamon, nutmeg, and salt in a bowl.
  3. In another bowl, whisk brown sugar, oil, egg, and vanilla.
  4. Add grated carrots and milk to the wet mixture.
  5. Combine wet and dry ingredients until just mixed.
  6. Spoon batter into muffin liners.
  7. Air fry for 12-15 minutes until a toothpick comes out clean.
  8. Cool before serving.
