Ingredients

  • 1 cup rolled oats
  • 1 cup grated carrots
  • 1 cup almond milk
  • 1 egg
  • 1 tbsp maple syrup
  • 1 tsp cinnamon
  • 1/2 tsp vanilla extract
  • 1/4 tsp nutmeg
  • 1/4 tsp baking powder
  • 2 tbsp raisins (optional)
  • 2 tbsp chopped walnuts (optional)

Instructions

  1. Preheat air fryer to 350°F (175°C).
  2. Mix all ingredients in a bowl until well combined.
  3. Divide the mixture evenly into silicone muffin cups.
  4. Place the cups in the air fryer basket.
  5. Cook for 12-15 minutes until set and lightly browned.
  6. Let cool for 5 minutes before serving.
