Description
Delicious and healthy carrot cake oatmeal cups made in the air fryer. Perfect for a quick breakfast or snack.
Ingredients

- 1 cup rolled oats
- 1 cup grated carrots
- 1 cup almond milk
- 1 egg
- 1 tbsp maple syrup
- 1 tsp cinnamon
- 1/2 tsp vanilla extract
- 1/4 tsp nutmeg
- 1/4 tsp baking powder
- 2 tbsp raisins (optional)
- 2 tbsp chopped walnuts (optional)
Instructions
- Preheat air fryer to 350°F (175°C).
- Mix all ingredients in a bowl until well combined.
- Divide the mixture evenly into silicone muffin cups.
- Place the cups in the air fryer basket.
- Cook for 12-15 minutes until set and lightly browned.
- Let cool for 5 minutes before serving.
Notes
- Use fresh carrots for best results.
- Adjust sweetness by adding more or less maple syrup.
- Store leftovers in an airtight container for up to 3 days.
