Description
A quick and healthy side dish made with cauliflower rice cooked in an air fryer. Perfect for low-carb and gluten-free diets.
Ingredients

- 1 medium head of cauliflower (about 4 cups riced)
- 1 tbsp olive oil
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1/4 tsp garlic powder
- 1/4 tsp onion powder
Instructions
- Cut the cauliflower into florets and pulse in a food processor until it resembles rice.
- In a bowl, mix the riced cauliflower with olive oil, salt, pepper, garlic powder, and onion powder.
- Preheat the air fryer to 375°F (190°C).
- Spread the cauliflower rice in the air fryer basket in an even layer.
- Cook for 10-12 minutes, shaking the basket halfway through, until lightly browned and tender.
- Serve immediately.
Notes
- Store leftovers in an airtight container in the fridge for up to 3 days.
- For extra flavor, add a squeeze of lemon juice or fresh herbs before serving.
- If the cauliflower rice is too moist, pat it dry with a paper towel before cooking.
