Ingredients

  • 2 cups cooked rice (preferably day-old)
  • 1 cup cooked chicken, diced
  • 1/2 cup frozen mixed vegetables
  • 1 egg, beaten
  • 2 tbsp soy sauce
  • 1 tbsp sesame oil
  • 1 tbsp vegetable oil
  • 1/2 tsp garlic powder
  • 1/4 tsp black pepper
  • 1 green onion, chopped

Instructions

  1. Preheat air fryer to 375°F (190°C).
  2. In a bowl, mix rice, chicken, vegetables, soy sauce, sesame oil, garlic powder, and black pepper.
  3. Add vegetable oil to the air fryer basket and spread evenly.
  4. Pour the rice mixture into the basket and cook for 5 minutes.
  5. Push rice to one side, pour beaten egg into the basket, and cook for 2 minutes.
  6. Stir everything together, breaking up the egg.
  7. Cook for another 3 minutes or until crispy.
  8. Garnish with chopped green onion before serving.
