A quick and easy recipe for making delicious chicken quesadillas in an air fryer. Perfect for a snack or meal.

- 2 cups cooked chicken, shredded
- 1 cup shredded cheese (cheddar or Mexican blend)
- 4 flour tortillas (8-inch)
- 1/2 cup bell peppers, diced
- 1/4 cup red onion, diced
- 1 tsp taco seasoning
- 1 tbsp olive oil
- 1/4 cup salsa (optional)
- 1/4 cup sour cream (optional)
Instructions
- Preheat the air fryer to 375°F (190°C).
- In a bowl, mix the shredded chicken, diced bell peppers, red onion, and taco seasoning.
- Brush one side of each tortilla with olive oil.
- Place two tortillas oil-side down in the air fryer basket.
- Spread the chicken mixture evenly over each tortilla.
- Sprinkle shredded cheese on top of the chicken mixture.
- Place the remaining tortillas on top, oil-side up.
- Air fry for 4-5 minutes, until the tortillas are golden and the cheese is melted.
- Remove from the air fryer, slice into wedges, and serve with salsa and sour cream if desired.
Notes
- Use pre-cooked chicken for faster preparation.
- Adjust the taco seasoning to your taste.
- For crispier quesadillas, cook for an additional minute.
- Add jalapeños for extra heat.
