Ingredients

- 2 boneless, skinless chicken breasts
- 1 tbsp olive oil
- 1/2 tsp salt
- 1/2 tsp black pepper
- 1/2 tsp garlic powder
- 1/2 tsp paprika
- 1/4 cup Greek yogurt
- 1 tbsp lemon juice
- 1/4 cup diced celery
- 1/4 cup diced red onion
- 1/4 cup chopped fresh parsley
Instructions
- Preheat the air fryer to 375°F (190°C).
- Rub chicken breasts with olive oil, salt, black pepper, garlic powder, and paprika.
- Place chicken in the air fryer basket and cook for 12-15 minutes, flipping halfway, until fully cooked.
- Let chicken cool, then dice into small pieces.
- In a bowl, mix Greek yogurt, lemon juice, celery, red onion, and parsley.
- Add diced chicken and stir until well combined.
- Serve immediately or refrigerate for later use.
Notes
- Use leftover rotisserie chicken for a quicker option.
- Adjust seasoning to your preference.
- Store in an airtight container for up to 3 days.
