Ingredients

  • 2 boneless, skinless chicken breasts
  • 1 tbsp olive oil
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 1/2 tsp garlic powder
  • 1/2 tsp paprika
  • 1/4 cup Greek yogurt
  • 1 tbsp lemon juice
  • 1/4 cup diced celery
  • 1/4 cup diced red onion
  • 1/4 cup chopped fresh parsley

Instructions

  1. Preheat the air fryer to 375°F (190°C).
  2. Rub chicken breasts with olive oil, salt, black pepper, garlic powder, and paprika.
  3. Place chicken in the air fryer basket and cook for 12-15 minutes, flipping halfway, until fully cooked.
  4. Let chicken cool, then dice into small pieces.
  5. In a bowl, mix Greek yogurt, lemon juice, celery, red onion, and parsley.
  6. Add diced chicken and stir until well combined.
  7. Serve immediately or refrigerate for later use.
