- 2 boneless, skinless chicken breasts
- 1/4 cup olive oil
- 1/4 cup fresh parsley, finely chopped
- 2 tbsp fresh oregano, finely chopped
- 3 cloves garlic, minced
- 1 tbsp red wine vinegar
- 1/2 tsp red pepper flakes
- 1/2 tsp salt
- 1/4 tsp black pepper
Instructions
- In a bowl, mix olive oil, parsley, oregano, garlic, red wine vinegar, red pepper flakes, salt, and black pepper to make the chimichurri sauce.
- Coat the chicken breasts evenly with the chimichurri sauce. Let them marinate for at least 30 minutes.
- Preheat the air fryer to 375°F (190°C) for 5 minutes.
- Place the chicken breasts in the air fryer basket, ensuring they don’t overlap.
- Cook for 12-15 minutes, flipping halfway through, until the internal temperature reaches 165°F (74°C).
- Let the chicken rest for 5 minutes before slicing and serving.
Notes
- For extra flavor, marinate the chicken for up to 4 hours.
- If the chicken breasts are thick, adjust cooking time by 2-3 minutes.
- Serve with extra chimichurri sauce for dipping.
