Juicy chicken thighs coated in vibrant chimichurri sauce and cooked to perfection in an air fryer.
Ingredients

- 4 chicken thighs (bone-in, skin-on)
- 1 cup fresh parsley
- 3 cloves garlic
- 2 tbsp red wine vinegar
- 1/4 cup olive oil
- 1 tsp dried oregano
- 1/2 tsp red pepper flakes
- 1/2 tsp salt
- 1/4 tsp black pepper
Instructions
- Blend parsley, garlic, vinegar, olive oil, oregano, red pepper flakes, salt, and pepper to make chimichurri.
- Coat chicken thighs with half the chimichurri sauce.
- Preheat air fryer to 375°F (190°C).
- Place chicken thighs in the air fryer basket, skin side down.
- Cook for 12 minutes, flip, then cook for another 8-10 minutes until internal temperature reaches 165°F (74°C).
- Brush with remaining chimichurri before serving.
Notes
- For crispier skin, pat chicken dry before seasoning.
- Store leftover chimichurri in the fridge for up to 3 days.
- Adjust red pepper flakes for preferred spice level.
