- 1 lb boneless, skinless chicken breasts, cut into strips
- 2 tbsp chipotle peppers in adobo sauce, minced
- 2 cloves garlic, minced
- 1 tbsp lime juice
- 1 tsp ground cumin
- 1 tsp smoked paprika
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1 cup cooked rice
- 1 cup black beans, drained and rinsed
- 1/2 cup corn kernels
- 1/2 cup diced tomatoes
- 1/4 cup chopped cilantro
- 1/4 cup shredded cheese (optional)
- 1 avocado, sliced (optional)
Instructions
- In a bowl, mix chicken with chipotle peppers, garlic, lime juice, cumin, paprika, salt, and pepper. Let marinate for 15 minutes.
- Preheat air fryer to 375°F (190°C).
- Place chicken in the air fryer basket in a single layer. Cook for 10-12 minutes, flipping halfway, until fully cooked.
- Assemble bowls with rice, black beans, corn, tomatoes, and cooked chicken.
- Top with cilantro, cheese, and avocado if desired.
