Crispy air fryer chipotle chicken quesadillas with a smoky kick.
Ingredients

- 2 boneless, skinless chicken breasts
- 1 tbsp chipotle paste
- 1 tsp garlic powder
- 1 tsp cumin
- 1/2 tsp salt
- 4 large flour tortillas
- 1 cup shredded cheddar cheese
- 1/2 cup shredded Monterey Jack cheese
- 1/4 cup chopped cilantro
- 1 tbsp olive oil
Instructions
- Preheat air fryer to 375°F (190°C).
- Mix chipotle paste, garlic powder, cumin, and salt. Coat chicken with the mixture.
- Air fry chicken for 12-15 minutes until fully cooked. Slice into thin strips.
- Place tortillas on a flat surface. Sprinkle half with cheddar and Monterey Jack cheese.
- Add chicken strips and cilantro. Fold tortillas in half.
- Brush both sides with olive oil.
- Air fry quesadillas for 4-5 minutes, flipping halfway, until golden and crispy.
- Slice and serve immediately.
Notes
- Use pre-cooked chicken for a quicker version.
- Adjust chipotle paste for more or less heat.
- Serve with sour cream or guacamole.
