- 100g mixed dried fruit
- 50g breadcrumbs
- 50g brown sugar
- 50g butter, melted
- 1 egg, beaten
- 1 tbsp flour
- 1 tsp mixed spice
- 1 tsp baking powder
- 2 tbsp brandy or orange juice (optional)
Instructions
- Mix dried fruit, breadcrumbs, sugar, and melted butter in a bowl.
- Add the beaten egg, flour, mixed spice, and baking powder. Stir well.
- Add brandy or orange juice if using. Mix until combined.
- Grease small ramekins or pudding molds.
- Divide the mixture evenly among the molds.
- Cover each with foil and place in the air fryer basket.
- Cook at 160°C (320°F) for 20-25 minutes.
- Remove foil and check if a skewer comes out clean.
- Let cool slightly before serving with custard or cream.
Notes
- Soak dried fruit in brandy overnight for extra flavor.
- Use gluten-free breadcrumbs for a gluten-free option.
- Store leftovers in the fridge for up to 3 days.
