Description

Make individual Christmas puddings in your air fryer for a quick and easy festive dessert. These mini puddings are rich, moist, and packed with traditional flavors.


Ingredients

  • 100g mixed dried fruit
  • 50g breadcrumbs
  • 50g brown sugar
  • 50g butter, melted
  • 1 egg, beaten
  • 1 tbsp flour
  • 1 tsp mixed spice
  • 1 tsp baking powder
  • 2 tbsp brandy or orange juice (optional)

Instructions

  1. Mix dried fruit, breadcrumbs, sugar, and melted butter in a bowl.
  2. Add the beaten egg, flour, mixed spice, and baking powder. Stir well.
  3. Add brandy or orange juice if using. Mix until combined.
  4. Grease small ramekins or pudding molds.
  5. Divide the mixture evenly among the molds.
  6. Cover each with foil and place in the air fryer basket.
  7. Cook at 160°C (320°F) for 20-25 minutes.
  8. Remove foil and check if a skewer comes out clean.
  9. Let cool slightly before serving with custard or cream.
