Description
These air fryer cinnamon sugar chickpea cookies are a healthy and delicious snack. They are crispy on the outside, soft on the inside, and packed with protein.

- 1 can (15 oz) chickpeas, drained and rinsed
- 1 tbsp olive oil
- 1 tbsp cinnamon
- 2 tbsp sugar
- 1 tsp vanilla extract
- 1/4 tsp salt
Instructions
- Preheat air fryer to 350°F (175°C).
- Pat chickpeas dry with a paper towel.
- Toss chickpeas with olive oil, cinnamon, sugar, vanilla, and salt in a bowl.
- Spread chickpeas in a single layer in the air fryer basket.
- Cook for 12-15 minutes, shaking the basket every 5 minutes.
- Let cool before serving.
Notes
- Store in an airtight container for up to 3 days.
- For extra crunch, cook for 1-2 minutes longer.
- Adjust sugar to taste.
