- 1 cup mashed ripe bananas (about 2–3 bananas)
- 1/4 cup melted coconut oil
- 1/4 cup honey or maple syrup
- 1 egg
- 1 tsp vanilla extract
- 1 cup all-purpose flour
- 1/2 cup shredded coconut
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1/4 tsp salt
Instructions
- Preheat your air fryer to 320°F (160°C) for 3 minutes.
- In a bowl, mix mashed bananas, coconut oil, honey, egg, and vanilla extract.
- In another bowl, combine flour, shredded coconut, baking powder, baking soda, and salt.
- Fold the dry ingredients into the wet mixture until just combined.
- Spoon the batter into lined muffin cups, filling each 2/3 full.
- Air fry for 10-12 minutes or until a toothpick comes out clean.
- Let cool for 5 minutes before serving.
Notes
- Use ripe bananas for natural sweetness.
- Adjust honey or maple syrup to taste.
- Check muffins early to prevent over-browning.
