  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt

Instructions

  1. Preheat your air fryer to 320°F (160°C) for 3 minutes.
  2. In a bowl, mix mashed bananas, coconut oil, honey, egg, and vanilla extract.
  3. In another bowl, combine flour, shredded coconut, baking powder, baking soda, and salt.
  4. Fold the dry ingredients into the wet mixture until just combined.
  5. Spoon the batter into lined muffin cups, filling each 2/3 full.
  6. Air fry for 10-12 minutes or until a toothpick comes out clean.
  7. Let cool for 5 minutes before serving.
