- 1 lb boneless, skinless chicken breasts, cubed
- 1 can (13.5 oz) coconut milk
- 2 tbsp curry powder
- 1 tbsp ginger, minced
- 2 cloves garlic, minced
- 1 tbsp olive oil
- 1 tsp salt
- 1/2 tsp black pepper
- 1/2 tsp turmeric
- 1/2 tsp cayenne pepper (optional)
- 1 small onion, diced
- 1 bell pepper, sliced
- Fresh cilantro for garnish
Instructions
- Preheat your air fryer to 375°F (190°C).
- In a bowl, mix chicken with olive oil, curry powder, ginger, garlic, salt, black pepper, turmeric, and cayenne pepper.
- Place chicken in the air fryer basket and cook for 10 minutes, shaking halfway.
- Add onion and bell pepper, then cook for another 5 minutes.
- Pour in coconut milk and stir gently.
- Cook for an additional 5 minutes until the chicken is fully cooked and the sauce thickens slightly.
- Garnish with fresh cilantro before serving.
