Ingredients

  • 1 cup all-purpose flour
  • 1/2 cup shredded coconut
  • 1/2 cup sugar
  • 1 tsp baking powder
  • 1/4 tsp salt
  • 1/2 cup milk
  • 1/4 cup melted butter
  • 1 egg
  • 1 tsp vanilla extract
  • 1 cup pineapple chunks
  • 2 tbsp brown sugar
  • 1 tbsp butter (for topping)

Instructions

  1. Preheat your air fryer to 320°F (160°C).
  2. In a bowl, mix flour, shredded coconut, sugar, baking powder, and salt.
  3. Add milk, melted butter, egg, and vanilla extract. Stir until smooth.
  4. Grease a round cake pan that fits in your air fryer.
  5. Melt 1 tbsp butter in the pan and sprinkle brown sugar evenly.
  6. Arrange pineapple chunks over the sugar.
  7. Pour the batter over the pineapple.
  8. Place the pan in the air fryer and cook for 20-25 minutes until a toothpick comes out clean.
  9. Let cool for 5 minutes, then invert onto a plate.

Notes

  • Use fresh or canned pineapple.
  • Check doneness at 20 minutes to prevent over-browning.
  • Serve warm with whipped cream or vanilla ice cream.
