A delicious and easy-to-make air fryer cake with coconut and pineapple for a tropical twist.
Ingredients

- 1 cup all-purpose flour
- 1/2 cup shredded coconut
- 1/2 cup sugar
- 1 tsp baking powder
- 1/4 tsp salt
- 1/2 cup milk
- 1/4 cup melted butter
- 1 egg
- 1 tsp vanilla extract
- 1 cup pineapple chunks
- 2 tbsp brown sugar
- 1 tbsp butter (for topping)
Instructions
- Preheat your air fryer to 320°F (160°C).
- In a bowl, mix flour, shredded coconut, sugar, baking powder, and salt.
- Add milk, melted butter, egg, and vanilla extract. Stir until smooth.
- Grease a round cake pan that fits in your air fryer.
- Melt 1 tbsp butter in the pan and sprinkle brown sugar evenly.
- Arrange pineapple chunks over the sugar.
- Pour the batter over the pineapple.
- Place the pan in the air fryer and cook for 20-25 minutes until a toothpick comes out clean.
- Let cool for 5 minutes, then invert onto a plate.
Notes
- Use fresh or canned pineapple.
- Check doneness at 20 minutes to prevent over-browning.
- Serve warm with whipped cream or vanilla ice cream.
