- 1 lb shrimp, peeled and deveined
- 1 cup shredded coconut
- 1/2 cup panko breadcrumbs
- 1/2 cup flour
- 2 eggs, beaten
- 1 tsp garlic powder
- 1 tsp paprika
- 1/2 tsp salt
- 1/4 tsp black pepper
- 8 large lettuce leaves
- 1 tbsp olive oil
Instructions
- Preheat air fryer to 375°F.
- Mix coconut, panko, garlic powder, paprika, salt, and pepper in a bowl.
- Coat shrimp in flour, dip in beaten eggs, then press into coconut mixture.
- Place shrimp in air fryer basket in a single layer. Lightly spray with olive oil.
- Air fry for 8-10 minutes, flipping halfway, until golden and crispy.
- Serve shrimp in lettuce cups.
Notes
- Use large shrimp for easier handling.
- For extra crispiness, toast coconut before coating.
- Serve with dipping sauce if desired.
