Ingredients

  • 1 cup shredded coconut
  • 1/2 cup panko breadcrumbs
  • 1/2 cup flour
  • 2 eggs, beaten

  • 1 tsp paprika

  • 1/4 tsp black pepper
  • 8 large lettuce leaves
  • 1 tbsp olive oil

Instructions

  1. Preheat air fryer to 375°F.
  2. Mix coconut, panko, garlic powder, paprika, salt, and pepper in a bowl.
  3. Coat shrimp in flour, dip in beaten eggs, then press into coconut mixture.
  4. Place shrimp in air fryer basket in a single layer. Lightly spray with olive oil.
  5. Air fry for 8-10 minutes, flipping halfway, until golden and crispy.
