- 1 lb large shrimp, peeled and deveined
- 1/2 cup all-purpose flour
- 2 eggs, beaten
- 1 cup shredded coconut
- 1/2 cup panko breadcrumbs
- 1/2 tsp salt
- 1/4 tsp black pepper
- Cooking spray
Instructions
- Preheat air fryer to 375°F (190°C).
- Set up three bowls: one with flour, one with beaten eggs, and one with coconut, panko, salt, and pepper.
- Dredge each shrimp in flour, then dip in egg, and coat with coconut mixture.
- Place shrimp in the air fryer basket in a single layer. Lightly spray with cooking spray.
- Cook for 6-8 minutes, flipping halfway, until golden and crispy.
- Serve immediately with your favorite dipping sauce.
Notes
- Use fresh or thawed shrimp for best results.
- For extra crispiness, spray shrimp lightly before cooking.
- Serve with sweet chili sauce or mango salsa.
