Description

Crispy coconut shrimp cooked in an air fryer, served with sweet chili sauce for dipping.


Ingredients

  • 1 lb large shrimp, peeled and deveined
  • 1/2 cup shredded coconut
  • 1/2 cup panko breadcrumbs
  • 1/2 cup all-purpose flour
  • 2 eggs, beaten
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/2 cup sweet chili sauce

Instructions

  1. Preheat air fryer to 375°F (190°C).
  2. Mix coconut and panko in a shallow bowl.
  3. Place flour in another bowl, and beaten eggs in a third bowl.
  4. Season shrimp with salt and pepper.
  5. Dredge each shrimp in flour, dip in egg, then coat with coconut mixture.
  6. Place shrimp in air fryer basket in a single layer.
  7. Cook for 8-10 minutes, flipping halfway, until golden brown.
  8. Serve with sweet chili sauce.

Notes

  • Pat shrimp dry before coating for better adhesion.
  • Don’t overcrowd the air fryer basket.
  • For extra crispiness, spray shrimp lightly with cooking oil.
