Ingredients

- 1 cup sushi rice
- 1 1/4 cups water
- 2 tbsp rice vinegar
- 1 tbsp sugar
- 1/2 tsp salt
- 1/2 lb fresh sushi-grade salmon or tuna
- 1 avocado, sliced
- 1 tbsp soy sauce
- 1 tsp sesame oil
- 1 tbsp sesame seeds
Instructions
- Rinse the sushi rice under cold water until the water runs clear.
- Cook the rice with water in a rice cooker or pot until tender.
- Mix rice vinegar, sugar, and salt, then fold into the cooked rice.
- Shape the rice into small bite-sized patties.
- Preheat the air fryer to 375°F (190°C).
- Air fry the rice patties for 8-10 minutes until crispy.
- Top each crispy rice patty with a slice of fish and avocado.
- Drizzle with soy sauce and sesame oil.
- Sprinkle with sesame seeds before serving.
