Description

Delicious and healthy date muffins made in an air fryer. Perfect for a quick breakfast or snack.


Ingredients

  • 1 cup pitted dates, chopped
  • 1 cup whole wheat flour
  • 1/2 cup oats
  • 1/2 cup milk
  • 1/4 cup honey
  • 1 egg
  • 1 tsp baking powder
  • 1/2 tsp cinnamon
  • 1/4 tsp salt
  • 1 tbsp coconut oil, melted

Instructions

  1. Preheat the air fryer to 350°F (180°C).
  2. In a bowl, mix flour, oats, baking powder, cinnamon, and salt.
  3. In another bowl, whisk milk, honey, egg, and coconut oil.
  4. Combine wet and dry ingredients, then fold in chopped dates.
  5. Spoon batter into greased muffin molds, filling 3/4 full.
  6. Air fry for 10-12 minutes until a toothpick comes out clean.
  7. Let cool for 5 minutes before serving.

Notes

  • Store in an airtight container for up to 3 days.
  • Replace honey with maple syrup for a vegan version.
  • Add chopped nuts for extra crunch.
