Delicious and healthy date muffins made in an air fryer. Perfect for a quick breakfast or snack.
Ingredients

- 1 cup pitted dates, chopped
- 1 cup whole wheat flour
- 1/2 cup oats
- 1/2 cup milk
- 1/4 cup honey
- 1 egg
- 1 tsp baking powder
- 1/2 tsp cinnamon
- 1/4 tsp salt
- 1 tbsp coconut oil, melted
Instructions
- Preheat the air fryer to 350°F (180°C).
- In a bowl, mix flour, oats, baking powder, cinnamon, and salt.
- In another bowl, whisk milk, honey, egg, and coconut oil.
- Combine wet and dry ingredients, then fold in chopped dates.
- Spoon batter into greased muffin molds, filling 3/4 full.
- Air fry for 10-12 minutes until a toothpick comes out clean.
- Let cool for 5 minutes before serving.
Notes
- Store in an airtight container for up to 3 days.
- Replace honey with maple syrup for a vegan version.
- Add chopped nuts for extra crunch.
