Ingredients

- 1 medium eggplant
- 1/2 cup breadcrumbs
- 1/4 cup grated parmesan cheese
- 1 tsp Italian seasoning
- 1/2 tsp garlic powder
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1 egg
- 1 tbsp water
- Olive oil spray
- 1/2 cup marinara sauce (for dipping)
Instructions
- Cut eggplant into 1/2-inch thick sticks.
- Mix breadcrumbs, parmesan, Italian seasoning, garlic powder, salt, and pepper in a bowl.
- Whisk egg and water in another bowl.
- Dip each eggplant stick in egg wash, then coat with breadcrumb mixture.
- Place sticks in air fryer basket in a single layer.
- Spray lightly with olive oil.
- Air fry at 375°F for 10 minutes, flip, then cook 5 more minutes until golden.
- Serve hot with marinara sauce.
Notes
- Use fresh eggplant for best texture.
- Panko breadcrumbs make extra crispy coating.
- Don’t overcrowd the air fryer basket.
