Description

Crispy air fryer eggplant parmesan sticks with a golden crust and tender inside. A quick and healthy twist on the classic.


Ingredients

Scale
  • 1 medium eggplant
  • 1/2 cup breadcrumbs
  • 1/4 cup grated parmesan cheese
  • 1 tsp Italian seasoning
  • 1/2 tsp garlic powder
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 egg
  • 1 tbsp water
  • Olive oil spray
  • 1/2 cup marinara sauce (for dipping)

Instructions

  1. Cut eggplant into 1/2-inch thick sticks.
  2. Mix breadcrumbs, parmesan, Italian seasoning, garlic powder, salt, and pepper in a bowl.
  3. Whisk egg and water in another bowl.
  4. Dip each eggplant stick in egg wash, then coat with breadcrumb mixture.
  5. Place sticks in air fryer basket in a single layer.
  6. Spray lightly with olive oil.
  7. Air fry at 375°F for 10 minutes, flip, then cook 5 more minutes until golden.
  8. Serve hot with marinara sauce.

  • Use fresh eggplant for best texture.
  • Panko breadcrumbs make extra crispy coating.
