A delicious twist on classic elote, this pasta salad is served in convenient cups and made with an air fryer for a crispy finish.
Ingredients

- 1 cup elbow pasta
- 1 cup corn kernels
- 1/4 cup mayonnaise
- 1/4 cup sour cream
- 1/2 tsp chili powder
- 1/2 tsp smoked paprika
- 1/4 tsp garlic powder
- 1/4 cup crumbled cotija cheese
- 1 tbsp lime juice
- 1 tbsp chopped cilantro
- Salt to taste
Instructions
- Cook pasta according to package instructions, then drain and let cool.
- Toss corn in the air fryer at 400°F for 5 minutes until lightly charred.
- In a bowl, mix mayonnaise, sour cream, chili powder, smoked paprika, and garlic powder.
- Stir in cooked pasta, air-fried corn, cotija cheese, lime juice, and cilantro.
- Season with salt to taste.
- Spoon into small cups and serve chilled.
Notes
- Substitute cotija with feta if unavailable.
- Adjust spice level to your preference.
- Best served fresh but can be refrigerated for up to 2 days.
