- 1 cup dried chickpeas, soaked overnight
- 1 small onion, chopped
- 3 cloves garlic
- 1/2 cup fresh parsley
- 1/2 cup fresh cilantro
- 1 tsp ground cumin
- 1 tsp ground coriander
- 1/2 tsp baking soda
- 1 tbsp lemon juice
- 1 tbsp olive oil
- Salt to taste
Instructions
- Drain and rinse the soaked chickpeas.
- Add chickpeas, onion, garlic, parsley, cilantro, cumin, coriander, baking soda, lemon juice, olive oil, and salt to a food processor.
- Pulse until the mixture is finely chopped but not pureed.
- Form the mixture into small balls or patties.
- Preheat the air fryer to 375°F (190°C).
- Place falafel in the air fryer basket in a single layer.
- Cook for 12-15 minutes, flipping halfway, until golden brown and crispy.
- Serve warm with tahini sauce or in a pita.
Notes
- Do not use canned chickpeas; they are too soft.
- Soak chickpeas for at least 12 hours for best texture.
- If the mixture is too wet, add a little flour to bind.
- For extra crispiness, spray falafel with oil before air frying.
