Description

Crispy air fryer garlic and herb roasted potatoes are a quick and easy side dish.


Ingredients

Scale
  • 1.5 lbs (680g) baby potatoes, halved
  • 2 tbsp olive oil
  • 3 cloves garlic, minced
  • 1 tsp dried rosemary
  • 1 tsp dried thyme
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 2 tbsp chopped fresh parsley

Instructions

  1. Preheat air fryer to 400°F (200°C).
  2. In a bowl, toss potatoes with olive oil, garlic, rosemary, thyme, salt, and pepper.
  3. Place potatoes in air fryer basket in single layer.
  4. Cook 15 minutes, shake basket, then cook 5-10 more minutes until golden and crispy.
  5. Sprinkle with fresh parsley before serving.

Notes

  • Cut potatoes same size for even cooking
  • Don’t overcrowd air fryer
  • Fresh herbs can replace dried – use triple the amount
