Description
Crispy air fryer garlic and herb roasted potatoes are a quick and easy side dish.
Ingredients

- 1.5 lbs (680g) baby potatoes, halved
- 2 tbsp olive oil
- 3 cloves garlic, minced
- 1 tsp dried rosemary
- 1 tsp dried thyme
- 1/2 tsp salt
- 1/4 tsp black pepper
- 2 tbsp chopped fresh parsley
Instructions
- Preheat air fryer to 400°F (200°C).
- In a bowl, toss potatoes with olive oil, garlic, rosemary, thyme, salt, and pepper.
- Place potatoes in air fryer basket in single layer.
- Cook 15 minutes, shake basket, then cook 5-10 more minutes until golden and crispy.
- Sprinkle with fresh parsley before serving.
Notes
- Cut potatoes same size for even cooking
- Don’t overcrowd air fryer
- Fresh herbs can replace dried – use triple the amount
