Description

Ingredients

  • 1 can (15 oz) chickpeas, drained and rinsed
  • 2 tbsp harissa paste
  • 1 tbsp olive oil
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 cup cooked quinoa
  • 1/2 cup chopped cucumber
  • 1/4 cup chopped red onion
  • 2 tbsp chopped fresh parsley
  • 1/4 cup crumbled feta cheese (optional)
  • 1 tbsp lemon juice

Instructions

  1. Preheat air fryer to 400°F (200°C).
  2. In a bowl, mix chickpeas, harissa paste, olive oil, salt, and black pepper.
  3. Spread chickpeas in the air fryer basket and cook for 12-15 minutes, shaking halfway, until crispy.
  4. Divide cooked quinoa between two bowls.
  5. Top with crispy chickpeas, cucumber, red onion, parsley, and feta cheese if using.
  6. Drizzle with lemon juice before serving.

Notes

  • For extra spice, add more harissa paste.
  • Replace quinoa with rice or couscous if preferred.
