Ingredients

- 1 can (15 oz) chickpeas, drained and rinsed
- 2 tbsp harissa paste
- 1 tbsp olive oil
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1 cup cooked quinoa
- 1/2 cup chopped cucumber
- 1/4 cup chopped red onion
- 2 tbsp chopped fresh parsley
- 1/4 cup crumbled feta cheese (optional)
- 1 tbsp lemon juice
Instructions
- Preheat air fryer to 400°F (200°C).
- In a bowl, mix chickpeas, harissa paste, olive oil, salt, and black pepper.
- Spread chickpeas in the air fryer basket and cook for 12-15 minutes, shaking halfway, until crispy.
- Divide cooked quinoa between two bowls.
- Top with crispy chickpeas, cucumber, red onion, parsley, and feta cheese if using.
- Drizzle with lemon juice before serving.
Notes
- For extra spice, add more harissa paste.
- Replace quinoa with rice or couscous if preferred.
- Store leftovers in an airtight container for up to 2 days.
