A delicious holiday fruitcake made easily in your air fryer.
Ingredients

- 1 cup mixed dried fruit
- 1 cup flour
- 1/2 cup sugar
- 1/2 cup butter
- 2 eggs
- 1 tsp baking powder
- 1 tsp vanilla extract
- 1/2 tsp cinnamon
Instructions
- Preheat air fryer to 320°F (160°C).
- Mix dried fruit, flour, sugar, butter, eggs, baking powder, vanilla, and cinnamon in a bowl.
- Pour batter into a greased cake pan.
- Place pan in air fryer basket.
- Cook for 25 minutes or until a toothpick comes out clean.
- Let cool before serving.
Notes
- Use any dried fruit you prefer.
- Check doneness at 20 minutes.
- Store in an airtight container for freshness.
