Description
A fun and easy Halloween-themed quesadilla made in an air fryer.
Ingredients

- 2 large flour tortillas
- 1 cup shredded cheese (cheddar or Monterey Jack)
- 1/2 cup cooked black beans, drained
- 1/4 cup diced bell peppers
- 1/4 cup corn kernels
- 1/4 tsp cumin
- 1/4 tsp chili powder
- Cooking spray or oil
Instructions
- Preheat your air fryer to 375°F (190°C).
- Place one tortilla on a cutting board and use a knife to cut out a jack o’ lantern face.
- Sprinkle half the cheese on the uncut tortilla.
- Add black beans, bell peppers, corn, cumin, and chili powder.
- Top with the remaining cheese and place the cut tortilla on top.
- Spray the air fryer basket with cooking spray and place the quesadilla inside.
- Cook for 5-6 minutes until the cheese melts and the tortilla is crispy.
- Remove, let cool slightly, and serve.
Notes
- Use cookie cutters for precise shapes.
- Adjust fillings based on preference.
- Serve with salsa or sour cream for dipping.
