Description

A fun and easy Halloween-themed quesadilla made in an air fryer.


Ingredients

  • 2 large flour tortillas
  • 1 cup shredded cheese (cheddar or Monterey Jack)
  • 1/2 cup cooked black beans, drained
  • 1/4 cup diced bell peppers
  • 1/4 cup corn kernels
  • 1/4 tsp cumin
  • 1/4 tsp chili powder
  • Cooking spray or oil

Instructions

  1. Preheat your air fryer to 375°F (190°C).
  2. Place one tortilla on a cutting board and use a knife to cut out a jack o’ lantern face.
  3. Sprinkle half the cheese on the uncut tortilla.
  4. Add black beans, bell peppers, corn, cumin, and chili powder.
  5. Top with the remaining cheese and place the cut tortilla on top.
  6. Spray the air fryer basket with cooking spray and place the quesadilla inside.
  7. Cook for 5-6 minutes until the cheese melts and the tortilla is crispy.
  8. Remove, let cool slightly, and serve.
