- 1/4 cup powdered sugar
- 1/2 cup unsalted butter, softened
- 2 large eggs
- 1 cup granulated sugar
- 2 tbsp lemon zest
- 1/4 cup lemon juice
- 2 tbsp all-purpose flour
- 1/4 tsp baking powder
- Powdered sugar for dusting
Instructions
- Preheat air fryer to 325°F (160°C).
- Mix 1 cup flour, powdered sugar, and butter to form the crust.
- Press the crust into a greased air fryer-safe pan.
- Air fry the crust for 10 minutes until lightly golden.
- Whisk eggs, granulated sugar, lemon zest, lemon juice, 2 tbsp flour, and baking powder for the filling.
- Pour the filling over the crust.
- Air fry for 15 minutes until the filling is set.
- Let it cool, then dust with powdered sugar.
- Slice and serve.
