Ingredients

  • 1/4 cup powdered sugar
  • 1/2 cup unsalted butter, softened
  • 2 large eggs
  • 1 cup granulated sugar
  • 2 tbsp lemon zest
  • 1/4 cup lemon juice
  • 2 tbsp all-purpose flour
  • 1/4 tsp baking powder
  • Powdered sugar for dusting

Instructions

  1. Preheat air fryer to 325°F (160°C).
  2. Mix 1 cup flour, powdered sugar, and butter to form the crust.
  3. Press the crust into a greased air fryer-safe pan.
  4. Air fry the crust for 10 minutes until lightly golden.
  5. Whisk eggs, granulated sugar, lemon zest, lemon juice, 2 tbsp flour, and baking powder for the filling.
  6. Pour the filling over the crust.
  7. Air fry for 15 minutes until the filling is set.
  8. Let it cool, then dust with powdered sugar.
  9. Slice and serve.
