Instructions
- Preheat the air fryer to 320°F (160°C).
- In a bowl, cream together butter and sugar until light and fluffy.
- Add the egg, sour cream, lemon juice, and lemon zest. Mix well.
- In another bowl, whisk flour, baking powder, and salt.
- Gradually fold the dry ingredients into the wet mixture until just combined.
- Pour the batter into a greased or lined air fryer pan.
- Air fry for 20-25 minutes, or until a toothpick comes out clean.
- Let cool before serving.
