Ingredients

  • 2 medium eggplants
  • 1 cup cooked lentils
  • 1/2 cup diced tomatoes
  • 1/4 cup chopped onion
  • 1 clove garlic, minced
  • 1 tsp olive oil
  • 1/2 tsp paprika
  • 1/2 tsp cumin
  • Salt and pepper to taste

Instructions

  1. Preheat the air fryer to 375°F (190°C).
  2. Cut the eggplants in half and scoop out the flesh, leaving a 1/2-inch border.
  3. Chop the scooped-out eggplant flesh and mix it with lentils, tomatoes, onion, garlic, olive oil, paprika, cumin, salt, and pepper.
  4. Stuff the mixture back into the eggplant halves.
  5. Place the stuffed eggplants in the air fryer basket and cook for 15-20 minutes, or until tender.
  6. Serve warm and enjoy.
