- 2 medium eggplants
- 1 cup cooked lentils
- 1/2 cup diced tomatoes
- 1/4 cup chopped onion
- 1 clove garlic, minced
- 1 tsp olive oil
- 1/2 tsp paprika
- 1/2 tsp cumin
- Salt and pepper to taste
Instructions
- Preheat the air fryer to 375°F (190°C).
- Cut the eggplants in half and scoop out the flesh, leaving a 1/2-inch border.
- Chop the scooped-out eggplant flesh and mix it with lentils, tomatoes, onion, garlic, olive oil, paprika, cumin, salt, and pepper.
- Stuff the mixture back into the eggplant halves.
- Place the stuffed eggplants in the air fryer basket and cook for 15-20 minutes, or until tender.
- Serve warm and enjoy.
Notes
- You can use any type of lentils for this recipe.
- Adjust the seasoning to your taste.
- For a crispier texture, cook for an additional 5 minutes.
