Ingredients

- 4 medium russet potatoes
- 1 tbsp olive oil
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1 cup shredded cheddar cheese
- 4 slices cooked bacon, crumbled
- 1/4 cup sour cream
- 2 tbsp chopped green onions
Instructions
- Preheat the air fryer to 400°F (200°C).
- Scrub the potatoes clean and pat them dry.
- Rub the potatoes with olive oil, salt, and pepper.
- Air fry the potatoes for 30-35 minutes, flipping halfway, until tender.
- Let the potatoes cool slightly, then cut them in half lengthwise.
- Scoop out most of the flesh, leaving a thin layer inside the skins.
- Fill each skin with shredded cheddar cheese and crumbled bacon.
- Air fry again at 375°F (190°C) for 3-5 minutes until the cheese melts.
- Top with sour cream and green onions before serving.
Notes
- Use leftover baked potatoes for quicker prep.
- For extra crispiness, brush the skins with butter before air frying.
- Customize toppings with jalapeños, salsa, or guacamole.
