Ingredients

- 2 medium sweet potatoes
- 1 tbsp olive oil
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1/2 cup shredded cheddar cheese
- 1/4 cup cooked bacon, crumbled
- 2 tbsp sour cream
- 1 tbsp chopped green onions
Instructions
- Preheat air fryer to 400°F (200°C).
- Scrub sweet potatoes, dry them, and pierce with a fork.
- Rub potatoes with olive oil, salt, and pepper.
- Air fry for 30-35 minutes until tender.
- Let cool slightly, then cut in half lengthwise.
- Scoop out most of the flesh, leaving a thin layer.
- Brush skins with oil and air fry for 5 minutes at 400°F.
- Fill skins with cheese and bacon, air fry 2-3 minutes until cheese melts.
- Top with sour cream and green onions before serving.
Notes
- Save scooped-out sweet potato for other recipes.
- For crispier skins, air fry an extra 2 minutes.
- Substitute turkey bacon for a lighter option.
