Ingredients

  • 2 medium sweet potatoes
  • 1 tbsp olive oil
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/2 cup shredded cheddar cheese
  • 1/4 cup cooked bacon, crumbled
  • 2 tbsp sour cream
  • 1 tbsp chopped green onions

Instructions

  1. Preheat air fryer to 400°F (200°C).
  2. Scrub sweet potatoes, dry them, and pierce with a fork.
  3. Rub potatoes with olive oil, salt, and pepper.
  4. Air fry for 30-35 minutes until tender.
  5. Let cool slightly, then cut in half lengthwise.
  6. Scoop out most of the flesh, leaving a thin layer.
  7. Brush skins with oil and air fry for 5 minutes at 400°F.
  8. Fill skins with cheese and bacon, air fry 2-3 minutes until cheese melts.
  9. Top with sour cream and green onions before serving.
