Description

Make crispy Mexican street corn in your air fryer for a quick and flavorful side dish.


Ingredients

  • 4 ears of corn, husked
  • 2 tbsp mayonnaise
  • 1/4 cup sour cream
  • 1/2 cup crumbled cotija cheese
  • 1 tsp chili powder
  • 1/2 tsp smoked paprika
  • 1 lime, cut into wedges
  • 2 tbsp chopped fresh cilantro

Instructions

  1. Preheat your air fryer to 390°F (200°C).
  2. Place the corn in the air fryer basket. Cook for 10 minutes, turning halfway.
  3. Mix mayonnaise and sour cream in a small bowl.
  4. Remove corn from the air fryer. Brush with the mayo-sour cream mixture.
  5. Sprinkle with cotija cheese, chili powder, and smoked paprika.
  6. Garnish with cilantro and serve with lime wedges.

Notes

  • For extra flavor, add a pinch of cayenne pepper.
  • Use queso fresco if cotija is unavailable.
  • Cook in batches if your air fryer is small.
