Make crispy Mexican street corn in your air fryer for a quick and flavorful side dish.
Ingredients

- 4 ears of corn, husked
- 2 tbsp mayonnaise
- 1/4 cup sour cream
- 1/2 cup crumbled cotija cheese
- 1 tsp chili powder
- 1/2 tsp smoked paprika
- 1 lime, cut into wedges
- 2 tbsp chopped fresh cilantro
Instructions
- Preheat your air fryer to 390°F (200°C).
- Place the corn in the air fryer basket. Cook for 10 minutes, turning halfway.
- Mix mayonnaise and sour cream in a small bowl.
- Remove corn from the air fryer. Brush with the mayo-sour cream mixture.
- Sprinkle with cotija cheese, chili powder, and smoked paprika.
- Garnish with cilantro and serve with lime wedges.
Notes
- For extra flavor, add a pinch of cayenne pepper.
- Use queso fresco if cotija is unavailable.
- Cook in batches if your air fryer is small.
