These air fryer mini casseroles are a delicious, quick-to-make option for breakfast, lunch, or dinner. Baked golden and bubbling in under 25 minutes, each mini casserole is portioned just right, with endless options to mix and match ingredients. Ingredients
Base Layer (Starch):

1/2 cup cooked rice OR pasta OR diced potatoes
Protein (Choose One):

1/4 cup shredded rotisserie chicken

OR 1/4 cup crumbled tofu (for vegan)

OR 1/4 cup browned ground beef
Veggies:

1/4 cup chopped broccoli, bell peppers, or mushrooms
Sauce:

2 tbsp Alfredo sauce, enchilada sauce, or tomato marinara
Toppings:

1/4 cup shredded cheese (cheddar, mozzarella, or vegan blend)

Optional: crushed chips, breadcrumbs, fresh herbs
Instructions

Prep the Mini Dishes
Grease two ramekins or small oven-safe dishes with olive oil spray. -
Assemble the Layers
Add starch at the bottom. Top with protein, veggies, sauce, then cheese. Lightly press down to compact. -
Preheat the Air Fryer
Set to 360°F and preheat for 3–4 minutes. -
Cook Place dishes in the air fryer basket. Cook at 360°F for 15–20 minutes. Rotate dishes halfway through for even browning.

Cool & Serve Let rest for 5 minutes. Garnish with herbs or a drizzle of sauce if desired.
