- 1 medium eggplant, sliced into 1/2-inch rounds
- 2 tbsp white miso paste
- 2 tbsp maple syrup
- 1 tbsp rice vinegar
- 1 tbsp olive oil
- 1 tsp grated ginger
- 1 clove garlic, minced
- 1 tsp sesame seeds (optional)
- 1 green onion, sliced (optional)
Instructions
- Preheat the air fryer to 375°F (190°C).
- In a small bowl, whisk together miso paste, maple syrup, rice vinegar, olive oil, ginger, and garlic.
- Brush both sides of the eggplant slices with the glaze.
- Place the eggplant in the air fryer basket in a single layer.
- Cook for 10 minutes, flip, and cook for another 5-7 minutes until tender and caramelized.
- Sprinkle with sesame seeds and green onion before serving.
