- 1 medium eggplant, sliced into 1/2-inch rounds
- 1 cup panko breadcrumbs
- 1/2 cup grated Parmesan cheese
- 1 teaspoon garlic powder
- 1 teaspoon dried oregano
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 2 large eggs, beaten
- 1/4 cup all-purpose flour
- Cooking spray
Instructions
- Preheat air fryer to 375°F (190°C).
- In a shallow dish, mix panko, Parmesan, garlic powder, oregano, salt, and pepper.
- Place flour in another shallow dish and eggs in a third.
- Dredge each eggplant slice in flour, then dip in egg, and coat with panko mixture.
- Lightly spray both sides of the coated eggplant with cooking spray.
- Place in the air fryer basket in a single layer.
- Cook for 8-10 minutes, flipping halfway, until golden and crispy.
- Serve warm with marinara sauce or yogurt dip.
Notes
- Slice eggplant evenly for consistent cooking.
- Use gluten-free panko if needed.
- For extra crispiness, spray lightly with oil before cooking.
