Description

Ingredients

  • 1 medium eggplant, sliced into 1/2-inch rounds
  • 1 cup panko breadcrumbs
  • 1/2 cup grated Parmesan cheese
  • 1 teaspoon garlic powder
  • 1 teaspoon dried oregano
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 large eggs, beaten
  • 1/4 cup all-purpose flour
  • Cooking spray

Instructions

  1. Preheat air fryer to 375°F (190°C).
  2. In a shallow dish, mix panko, Parmesan, garlic powder, oregano, salt, and pepper.
  3. Place flour in another shallow dish and eggs in a third.
  4. Dredge each eggplant slice in flour, then dip in egg, and coat with panko mixture.
  5. Lightly spray both sides of the coated eggplant with cooking spray.
  6. Place in the air fryer basket in a single layer.
  7. Cook for 8-10 minutes, flipping halfway, until golden and crispy.
  8. Serve warm with marinara sauce or yogurt dip.
