Ingredients

  • 2 medium zucchinis, thinly sliced
  • 1/2 cup grated parmesan cheese
  • 1/2 cup breadcrumbs
  • 1 tsp garlic powder
  • 1 tsp paprika
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 egg, beaten
  • Cooking spray

Instructions

  1. Preheat your air fryer to 375°F (190°C).
  2. In a bowl, mix parmesan cheese, breadcrumbs, garlic powder, paprika, salt, and pepper.
  3. Dip zucchini slices into the beaten egg, then coat with the parmesan mixture.
  4. Place coated zucchini slices in a single layer in the air fryer basket. Lightly spray with cooking spray.
  5. Air fry for 8-10 minutes, flipping halfway through, until golden and crispy.
  6. Remove from the air fryer and let cool slightly before serving.
